WHITE ASPARAGUS and GRILLED KING OYSTER MUSHROOMS with arugula seedlings, bean sprouts, Thai basil, and a mustard sauce

SCALLOP CEVICHE (lightly cooked) with yuzu jelly, and orange and tarragon vinaigrette

DUNGENESS CRAB with AVOCADO yellow pepper relish, and a sea urchin emulsion


DINNER

VEGETARIAN, ROAST CAULIFLOWER and POTATO GNOCCHI curry-flavoured, and garnished with almonds, coriander, and sourdough croutons

PAN FRIED PICKEREL pattypan squash risotto, and bell pepper and chorizo broth

GRILLED DUCK BREAST carrot and parsnip confit, wheat berries, and pickled dates

HERB-ROASTED RACK of LAMB artichoke purée, ricotta dumplings, purslane, and a Moroccan jus


DESSERTS

CANADIAN, UNPASTEURIZED MILK CHEESES with Rundles’ crackers, and walnut-raisin bread

VANILLA and WHITE CHOCOLATE PARFAIT with lime granita, and fresh and dried pineapple

LEMON and POPPY SEED… a surprise – but not of the lime-jello-and-marshmallow variety

MILK and CHOCOLATE dried milk foam, two types of frozen milk-chocolate mousse, chocolate meringue, and dulce de leche – a caramelized condensed-milk sauce
