CRISP, SUCCULENT CONFIT OF DUCK with braised eggplant and roasted potatoes and onions flavoured with balsamic vinegar

VEGETARIAN, ROAST CAULIFLOWER and POTATO GNOCCHI curry-flavoured, and garnished with almonds, coriander, and sourdough croutons

POACHED ALASKAN HALIBUT with fresh peas, in a sauce flavoured with lemon thyme

COFFRE (breast on the bone) OF ORGANIC CHICKEN cooked sous-vide, with crisp chicken skin, parsnip confit, and a vin jaune (yellow wine) sauce
